As I prepare for the Publix Savannah Women’s Half Marathon on April 6, my runs are longer and my body is needing to be geared up and ready to go.  I feel like on days with a long run, by the time I get home, shower, run errands and possibly rest up, the day is shot.  What about dinner?  Is it a fast food night?  Just because I am running many miles a week and cross training for hours doesn’t mean I can fuel my body with junk.  

I am by no means a chef or foodie.  I can bake like crazy, but cooking just isn’t my thing.  Ironically, I LOVE watching the Food Network and other cooking programs and there are days that I really wish I could get into cooking, but I am just on the go so much that crazy long prepping and cooking just isn’t how I use my time.

It is time to get creative – yet be time efficient and save money.  Did you know that Publix have these really cool things called Publix Slow Cooker Meal Kits?  I just discovered these amazing creations a few weeks ago and recently checked them out.  They are a meal in a box that all you do is dump the ingredients in the slow cooker and let it cook for a few hours. 
There are a number of different choices including beef, chicken, and shrimp.

With a cook time of 4-8 hours (depending on which kit and setting you put it on), you can throw your meal in, get your run done, shower, etc and BOOM dinner is done without any prep or hours in the kitchen.  Basically, recipes so easy that even I can do them!  These are basically “Brandi-proof” and a HUGE time saver.  With my training schedule, I need to save as much time as possible. 

After checking out the selection of Publix Slow Cooker Meal Kits at my local Publix, I decided that some good ol’ southern chicken & dumplings sounded FANTASTIC for Sunday dinner.  I had a half marathon the next morning and by the time I got home and cleaned up, it was already afternoon.  I had a few errands to run, so I knew that I could dump the ingredients in the slow cooker and just let it do its magic as I went about my day.

The chicken & dumplings slow cooker meal kit included three chicken breasts, gravy, dumplings, carrots, celery and onions (since my family isn’t huge on onions, I didn’t use them). 

Y’all!  These were absolutely AMAZING!  Just get a small side put together and everything you need is ready for a tasty meal that tastes like you spent all day in the kitchen.  This is
definitely a family approved meal choice for the future.

There are also some other great meal kits in the meat department of Publix including meal kits that you cook with all the ingredients included and easy to follow recipes and some amazing looking grill kits.  I can’t wait for some warmer weather to fire up the grill and try some of these out soon.  Publix really hit it out of the ballpark again with these kits!
